Strawberry Bread

This is a super yummy bread for the holidays.  I think the taste gets better a day or two later too.

3 cups flour              4 eggs, beaten
2 cups sugar             1 1/2 cups oil
1 tsp. baking soda     2 (10 oz) pkgs sweetened frozen strawberries
2 tsp. cinnamon

Thaw strawberries.  Prepare loaf pans by greasing and lining bottom only with wax paper.  Mix flour, soda, sugar and cinnamon.  Add eggs, oil and strawberries.
 
MIX WELL

Fill pans only 1/2 full.  Bake at 350 for 60-75 minutes.  

Smaller sized loaf pans take less time to cook bread.  Check with toothpick in center for doneness.  Cover with a foil tent if top starts to burn.

I've had trouble with this recipe on the timing.  It seems to take a long time to cook in the center.  But if you aren't careful the top will burn.  That is why I tried making it in smaller loaf pans and it seemed to be ok.  This recipe just needs a watchful eye and frequent tests with toothpicks to check it near the end of the time.  It makes a wonderful scent as its baking.  And when it is done it is moist and sweet.

  2. He probably did. I don't make it as much now since family get togethers are not the same anymore. Plus Jon and I don't need the calories.
